Ingredients:
For the Marinade:
1/4 cup soy sauce
Two tablespoons of sesame oil
Two tablespoons brown sugar
Two tablespoons of rice vinegar
Two tablespoons minced garlic
One tablespoon grated ginger
One tablespoon gochujang (Korean chili paste)
One tablespoon honey
One teaspoon of black pepper
For the Tacos:
1.5 lbs (680g) beef (such as flank steak or short ribs), thinly sliced
12 small flour or corn tortillas
1 cup shredded lettuce
1 cup thinly sliced red cabbage
1/2 cup sliced green onions
1/4 cup chopped fresh cilantro
1/4 cup toasted sesame seeds
Lime wedges for serving
Optional Additions:
Korean BBQ sauce for extra drizzling
Kimchi
Sriracha mayo
Sliced radishes
Instructions:
Marinade Preparation:
a. In a mixing bowl, whisk together the soy sauce, sesame oil, brown sugar, rice vinegar, minced garlic, grated ginger, gochujang, honey, and black pepper until well combined.
b. Add the thinly sliced beef to the marinade and toss until all the meat is well coated. Let it marinate for at least 30 minutes or overnight for enhanced flavor.
Tacos Assembly:
a. Heat a grill or skillet over medium-high heat. Cook the marinated beef slices for 2-3 minutes per side until nicely browned and cooked to desired doneness. Remove from heat and let it rest for a few minutes. Slice the grilled meat into bite-sized pieces.
