"Prepare to embark on a tantalizing journey where Korean BBQ meets taco perfection, leaving your taste buds craving more." - James

Korean BBQ Tacos offer a delectable fusion of Korean flavors and the beloved taco format. Inspired by Korean cuisine's vibrant and bold tastes, I created this recipe to combine the smoky, savory goodness of Korean BBQ with the handheld delight of a taco. The harmonious blend of flavors enamored my family and friends, the tender grilled meat and the refreshing garnishes. Get ready to elevate your taco game with these sensational Korean BBQ tacos!

For the Marinade:

1/4 cup soy sauce

Two tablespoons of sesame oil

Two tablespoons brown sugar

Two tablespoons of rice vinegar

Two tablespoons minced garlic

One tablespoon grated ginger

One tablespoon gochujang (Korean chili paste)

One tablespoon honey

One teaspoon of black pepper

For the Tacos:

1.5 lbs (680g) beef (such as flank steak or short ribs), thinly sliced

12 small flour or corn tortillas

1 cup shredded lettuce

1 cup thinly sliced red cabbage

1/2 cup sliced green onions

1/4 cup chopped fresh cilantro

1/4 cup toasted sesame seeds

Lime wedges for serving

Optional Additions:

Korean BBQ sauce for extra drizzling

Sriracha mayo

Sliced radishes

Marinade Preparation:

a. In a mixing bowl, whisk together the soy sauce, sesame oil, brown sugar, rice vinegar, minced garlic, grated ginger, gochujang, honey, and black pepper until well combined.

b. Add the thinly sliced beef to the marinade and toss until all the meat is well coated. Let it marinate for at least 30 minutes or overnight for enhanced flavor.

Tacos Assembly:

a. Heat a grill or skillet over medium-high heat. Cook the marinated beef slices for 2-3 minutes per side until nicely browned and cooked to desired doneness. Remove from heat and let it rest for a few minutes. Slice the grilled meat into bite-sized pieces.

b. Warm the tortillas in a dry skillet or grill for about 20 seconds on each side until pliable.

c. Fill each tortilla with a generous amount of the grilled beef slices. Top with shredded lettuce, sliced red cabbage, green onions, fresh cilantro, and toasted sesame seeds.

d. Optional: Drizzle with additional Korean BBQ sauce, add a spoonful of kimchi, or garnish with sriracha mayo and sliced radishes.

Serve the Korean BBQ tacos while still warm. Squeeze fresh lime juice over the tacos just before taking your first bite. Relish the perfect harmony of Korean BBQ flavors, the grilled meat's tenderness, and the garnishes' refreshing crunch.

Experiment with different cuts of beef or substitute with chicken or pork according to your preference.

Adjust the spice level by adding more or less gochujang to the marinade.

If you prefer a vegetarian version, substitute the meat with grilled tofu or portobello mushrooms.
