About the Recipe
The mixture is seasoned with garlic, onion, smoked paprika, soy sauce, and tomato paste, giving the patties plenty of flavor and depth. Panko breadcrumbs are added to help bind the mixture together and create a crispy exterior when baked in the oven.
Ingredients
1 can of black beans, drained and rinsed
1/2 cup cooked quinoa
1/2 cup panko breadcrumbs
1/4 cup chopped onion
2 cloves garlic, minced
1 tablespoon tomato paste
1 tablespoon soy sauce
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
4 burger buns
Toppings of your choice (lettuce, tomato, avocado, etc.)
Preparation
Preheat the oven to 375°F (190°C).
In a large bowl, mash the black beans with a fork or potato masher until they are mostly mashed, but still have some texture.
Add in the cooked quinoa, panko breadcrumbs, chopped onion, minced garlic, tomato paste, soy sauce, smoked paprika, salt, and black pepper. Mix well to combine.
Form the mixture into 4 equal-sized patties.
Place the patties on a baking sheet lined with parchment paper.
Bake the patties for 20-25 minutes, flipping halfway through, until they are golden brown and crispy on the outside.
Serve the patties on the burger buns with your choice of toppings.
NOTES:
To make the patties hold together better, you can refrigerate them for 30 minutes before baking.
You can also cook the patties on a stovetop or grill if you prefer. Simply cook them over medium heat for about 5-7 minutes on each side, until they are golden brown and cooked through.
