About the Recipe

  • 1 head of cabbage, thinly sliced

  • 1 onion, diced

  • 3 garlic cloves, minced

  • 4 cups vegetable broth

  • 1 can diced tomatoes

  • 2 tablespoons olive oil

  • Salt and pepper to taste


  1. Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté until onion is translucent, about 5 minutes.

  2. Add thinly sliced cabbage and cook for another 5-7 minutes, until cabbage is slightly wilted.

  3. Add vegetable broth and diced tomatoes to the pot and bring to a boil.

  4. Reduce heat to low and let simmer for 20-25 minutes, until cabbage is tender.

  5. Season with salt and pepper to taste.


  • You can add other vegetables to this soup, such as carrots, celery, or potatoes, for extra flavor and nutrition.

  • This soup can be stored in an airtight container in the fridge for up to 5 days, making it great for meal prepping or for leftovers.
