Ingredients
1 head of cabbage, thinly sliced
1 onion, diced
3 garlic cloves, minced
4 cups vegetable broth
1 can diced tomatoes
2 tablespoons olive oil
Salt and pepper to taste
Preparation
Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté until onion is translucent, about 5 minutes.
Add thinly sliced cabbage and cook for another 5-7 minutes, until cabbage is slightly wilted.
Add vegetable broth and diced tomatoes to the pot and bring to a boil.
Reduce heat to low and let simmer for 20-25 minutes, until cabbage is tender.
Season with salt and pepper to taste.
