Ingredients
1 onion, diced
2 cloves garlic, minced
2 carrots, diced
2 stalks of celery, diced
4 cups vegetable broth
1 bunch of kale, chopped
1 tablespoon olive oil
Salt and pepper to taste
Preparation
Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery and sauté until onion is translucent, about 5-7 minutes.
Add vegetable broth to the pot and bring to a boil. Add kale to the pot and stir to combine.
Reduce heat to low and let simmer for 10-15 minutes, until kale is wilted and tender.
Use an immersion blender or regular blender to blend the soup until smooth and creamy.
Season with salt and pepper to taste.
NOTES:
You can add other vegetables such as potatoes or zucchini to the soup for added texture and flavor.
