  • 1 onion, diced

  • 2 cloves garlic, minced

  • 2 carrots, diced

  • 2 stalks of celery, diced

  • 4 cups vegetable broth

  • 1 bunch of kale, chopped

  • 1 tablespoon olive oil

  • Salt and pepper to taste


  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery and sauté until onion is translucent, about 5-7 minutes.

  2. Add vegetable broth to the pot and bring to a boil. Add kale to the pot and stir to combine.

  3. Reduce heat to low and let simmer for 10-15 minutes, until kale is wilted and tender.

  4. Use an immersion blender or regular blender to blend the soup until smooth and creamy.
