Ingredients

  • 1 can of white beans, drained and rinsed

  • 1 onion, diced

  • 2 carrots, diced

  • 2 stalks of celery, diced

  • 3 cloves of garlic, minced

  • 4 cups vegetable broth

  • 1 tablespoon olive oil

  • 1 teaspoon dried thyme

  • Salt and pepper to taste

Preparation

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic and sauté until onion is translucent, about 5-7 minutes.

  2. Add white beans to the pot and stir to combine.

  3. Add vegetable broth and thyme to the pot and bring to a boil. Reduce heat to low and let simmer for 20-25 minutes, until vegetables are tender and the soup is fragrant.

  4. Use an immersion blender or regular blender to blend the soup until smooth and creamy.

  5. Season with salt and pepper to taste.


NOTES:


  • You can use any type of white beans, such as cannellini, navy, or Great Northern beans.

  • For added flavor, you can add spices such as cumin, paprika, or rosemary to the soup.

  • This soup can be stored in an airtight container in the fridge for up to 5 days, making it great for meal prepping or for leftovers.
