1 can of white beans, drained and rinsed
1 onion, diced
2 carrots, diced
2 stalks of celery, diced
3 cloves of garlic, minced
4 cups vegetable broth
1 tablespoon olive oil
1 teaspoon dried thyme
Salt and pepper to taste
Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic and sauté until onion is translucent, about 5-7 minutes.
Add white beans to the pot and stir to combine.
