These Mediterranean Zucchini Boats are a healthy and flavorful dish that are perfect for lunch or dinner. Ingredients
4 medium zucchini
1 tbsp olive oil
1/2 lb ground lamb or beef
1 small onion, chopped
2 cloves garlic, minced
1/2 tsp ground cumin
1/2 tsp dried oregano
1/4 tsp salt
1/4 tsp black pepper
1/2 cup crumbled feta cheese
1/4 cup chopped kalamata olives
2 tbsp chopped fresh parsley
Preparation
Preheat the oven to 375°F.
Cut the ends off the zucchini and slice them in half lengthwise.
Use a spoon to scoop out the seeds and flesh from the center of each zucchini half, creating a hollow boat.
Place the zucchini boats in a baking dish and set aside.
In a large skillet, heat the olive oil over medium-high heat.
Add the ground lamb or beef to the skillet and cook until browned, breaking it up into small pieces with a wooden spoon, about 5-7 minutes.
Add chopped onion, minced garlic, cumin, oregano, salt, and pepper to the skillet and cook until onion is translucent, about 5 minutes.
Remove the skillet from the heat and stir in crumbled feta cheese, chopped kalamata olives, and chopped parsley.
Spoon the mixture into the hollowed-out zucchini boats, dividing it evenly among them.
Bake the zucchini boats in the preheated oven until the zucchini is tender and the filling is hot and bubbly, about 20-25 minutes.
Serve the zucchini boats hot, garnished with additional chopped parsley if desired.
