This Keto Zuppa Toscana is a low-carb version of the classic Italian soup that is both hearty and delicious. It's packed with flavor and healthy fats, and the combination of sausage, kale, and bacon makes it a filling and satisfying meal. This recipe is easy to make and perfect for those on a low-carb or ketogenic diet.
Ingredients
1 lb ground Italian sausage
6 slices bacon, chopped
1 small onion, chopped
3 cloves garlic, minced
1/2 tsp red pepper flakes
4 cups chicken broth
1 cup heavy cream
1 bunch kale, stemmed and chopped
Salt and pepper to taste
Optional: grated Parmesan cheese for garnish
Preparation
In a large pot or Dutch oven, cook the chopped bacon over medium-high heat until crisp, about 5-7 minutes.
Remove the bacon from the pot with a slotted spoon and set it aside, leaving the bacon fat in the pot.
Add the ground Italian sausage to the pot and cook until browned, breaking it up into small pieces with a wooden spoon, about 5-7 minutes.
Add chopped onion, minced garlic, and red pepper flakes to the pot and cook until onion is translucent, about 5 minutes.
Add chicken broth to the pot and bring it to a simmer.
Add chopped kale to the pot and simmer until it is wilted, about 10 minutes.
Stir in heavy cream and cooked bacon to the pot.
Season the soup with salt and pepper to taste.
Ladle the soup into bowls and sprinkle with grated Parmesan cheese, if desired.
Serve immediately and enjoy!
