Poke bowls are a popular Hawaiian dish that's becoming increasingly popular all around the world. It's a refreshing and nutritious meal that's perfect for a hot day. This Keto Salmon Poke Bowl recipe is made with fresh, raw salmon and a variety of veggies, all served over a bed of cauliflower rice. It's a healthy and satisfying meal that's perfect for lunch or dinner.
1 lb fresh salmon, cut into small cubes
2 tbsp tamari or soy sauce
2 tbsp sesame oil
2 tsp rice vinegar
1 tsp honey (optional)
1/4 cup chopped green onions
2 tbsp chopped fresh cilantro
1 small avocado, sliced
1/2 cup shredded carrots
1/2 cup diced cucumber
1/2 cup sliced radishes
4 cups cooked cauliflower rice
In a large bowl, whisk together tamari or soy sauce, sesame oil, rice vinegar, and honey (if using).
Add the salmon cubes to the bowl and toss to coat in the marinade. Cover the bowl and refrigerate for at least 30 minutes.
In a separate bowl, combine the chopped green onions and chopped cilantro.
When ready to assemble the poke bowls, divide the cauliflower rice evenly between four bowls.
Remove the salmon from the marinade and place the cubes on top of the cauliflower rice.
Divide the avocado slices, shredded carrots, diced cucumber, and sliced radishes evenly between the four bowls.
Drizzle the remaining marinade over the top of each bowl.
Sprinkle the chopped green onions and cilantro over the top of each bowl.
Serve the poke bowls immediately.
