These Mediterranean Zucchini Boats are a healthy and flavorful dish that are perfect for lunch or dinner. They're packed with protein and veggies, and the combination of feta cheese, olives, and herbs.

Ingredients

  • 4 medium zucchini

  • 1 tbsp olive oil

  • 1/2 lb ground lamb or beef

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1/2 tsp ground cumin

  • 1/2 tsp dried oregano

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 1/2 cup crumbled feta cheese

  • 1/4 cup chopped kalamata olives

  • 2 tbsp chopped fresh parsley

Preparation

  1. Preheat the oven to 375°F.

  2. Cut the ends off the zucchini and slice them in half lengthwise.

  3. Use a spoon to scoop out the seeds and flesh from the center of each zucchini half, creating a hollow boat.

  4. Place the zucchini boats in a baking dish and set aside.

  5. In a large skillet, heat the olive oil over medium-high heat.

  6. Add the ground lamb or beef to the skillet and cook until browned, breaking it up into small pieces with a wooden spoon, about 5-7 minutes.

  7. Add chopped onion, minced garlic, cumin, oregano, salt, and pepper to the skillet and cook until onion is translucent, about 5 minutes.

  8. Remove the skillet from the heat and stir in crumbled feta cheese, chopped kalamata olives, and chopped parsley.

  9. Spoon the mixture into the hollowed-out zucchini boats, dividing it evenly among them.

  10. Bake the zucchini boats in the preheated oven until the zucchini is tender and the filling is hot and bubbly, about 20-25 minutes.

  11. Serve the zucchini boats hot, garnished with additional chopped parsley if desired.
