1 lb. large shrimp, peeled and deveined
4 medium zucchini, spiralized into noodles
3 cloves garlic, minced
2 tablespoons olive oil
2 tablespoons butter
1/4 cup freshly squeezed lemon juice
1/4 cup chopped fresh parsley
Salt and pepper, to taste
In a large skillet over medium heat, melt the butter and olive oil together.
Add the minced garlic to the skillet and sauté for 1-2 minutes, or until fragrant.
Add the shrimp to the skillet and sauté for 3-4 minutes, or until they're pink and opaque.
Remove the shrimp from the skillet and set them aside.
Add the zucchini noodles to the same skillet and sauté for 2-3 minutes, or until they're tender but still slightly firm.
Add the lemon juice to the skillet and toss the zucchini noodles with the juice until they're evenly coated.
Add the shrimp back to the skillet and toss with the zucchini noodles.
Sprinkle with chopped parsley and season with salt and pepper to taste.
