About the Recipe

This Keto Meatloaf recipe is a low-carb twist on a classic comfort food that's easy to make and packed with flavor. It's made with ground beef and almond flour instead of breadcrumbs, and it's topped with a tangy and sweet glaze made with sugar-free ketchup and mustard. Serve it with some roasted veggies or a side salad for a satisfying and healthy meal.

Ingredients

  • 1 pound ground beef

  • 1/2 cup almond flour

  • 1/2 cup grated parmesan cheese

  • 1/4 cup diced onion

  • 2 cloves garlic, minced

  • 1 egg

  • 1 tbsp Worcestershire sauce

  • 1 tsp dried oregano

  • 1 tsp dried thyme

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/4 cup sugar-free ketchup

  • 1 tbsp yellow mustard

Preparation

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, combine the ground beef, almond flour, parmesan cheese, onion, garlic, egg, Worcestershire sauce, oregano, thyme, salt, and black pepper. Mix until well combined.

  3. Transfer the mixture to a 9x5 inch loaf pan and smooth out the top.

  4. In a small bowl, whisk together the sugar-free ketchup and yellow mustard.

  5. Spread the ketchup and mustard mixture over the top of the meatloaf.

  6. Bake the meatloaf in the preheated oven for 45-50 minutes, or until the internal temperature reaches 160°F (71°C).

  7. Once done, remove the meatloaf from the oven and let it cool for a few minutes.

  8. Slice the meatloaf into 4 servings and serve hot.
