This Keto Meatloaf recipe is a low-carb twist on a classic comfort food that's easy to make and packed with flavor. It's made with ground beef and almond flour instead of breadcrumbs, and it's topped with a tangy and sweet glaze made with sugar-free ketchup and mustard. Serve it with some roasted veggies or a side salad for a satisfying and healthy meal.
Ingredients
1 pound ground beef
1/2 cup almond flour
1/2 cup grated parmesan cheese
1/4 cup diced onion
2 cloves garlic, minced
1 egg
1 tbsp Worcestershire sauce
1 tsp dried oregano
1 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
1/4 cup sugar-free ketchup
1 tbsp yellow mustard
Preparation
Preheat the oven to 375°F (190°C).
In a large bowl, combine the ground beef, almond flour, parmesan cheese, onion, garlic, egg, Worcestershire sauce, oregano, thyme, salt, and black pepper. Mix until well combined.
Transfer the mixture to a 9x5 inch loaf pan and smooth out the top.
In a small bowl, whisk together the sugar-free ketchup and yellow mustard.
Spread the ketchup and mustard mixture over the top of the meatloaf.
Bake the meatloaf in the preheated oven for 45-50 minutes, or until the internal temperature reaches 160°F (71°C).
Once done, remove the meatloaf from the oven and let it cool for a few minutes.
Slice the meatloaf into 4 servings and serve hot.
