This Garlicky Lemon Mahi Mahi is a light and flavorful seafood dish that's perfect for a healthy dinner. It's made with fresh mahi mahi fillets that are marinated in a garlicky lemon sauce and then grilled to perfection. 4 mahi mahi fillets (about 6 oz each)
3 cloves garlic, minced
1/4 cup olive oil
1/4 cup fresh lemon juice
1 tbsp lemon zest
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
Lemon wedges, for serving
Fresh parsley, chopped for garnish
In a small bowl, whisk together the garlic, olive oil, lemon juice, lemon zest, oregano, salt, and black pepper.
Place the mahi mahi fillets in a shallow dish and pour the marinade over them, turning to coat. Cover the dish and refrigerate for at least 30 minutes, or up to 2 hours.
Preheat the grill to medium-high heat.
Remove the fish from the marinade and discard the remaining marinade.
Grill the mahi mahi fillets for 3-4 minutes per side, or until they are cooked through and flaky.
Once done, remove the fillets from the grill and let them rest for a few minutes.
Serve the Garlicky Lemon Mahi Mahi with lemon wedges and fresh parsley on top.
