This Cheesy Bacon Butternut Squash recipe is a keto-friendly side dish that's perfect for fall and winter. Roasted butternut squash is topped with crispy bacon and melted cheddar cheese for a comforting and delicious side dish that's sure to be a hit with your family and friends.


  • 1 medium butternut squash, peeled, seeded, and cut into 1-inch cubes

  • 4 slices bacon, cooked and crumbled

  • 1 cup shredded cheddar cheese

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1/2 teaspoon dried thyme

  • Salt and pepper, to taste


  1. Preheat the oven to 400°F.

  2. In a large bowl, toss the butternut squash cubes with olive oil, garlic powder, thyme, salt, and pepper until well coated.

  3. Spread the butternut squash cubes out in a single layer on a large baking sheet.

  4. Roast the butternut squash in the preheated oven for 25-30 minutes, or until they're tender and lightly browned.

  5. Remove the baking sheet from the oven and sprinkle the cooked bacon and shredded cheddar cheese over the top of the butternut squash.

  6. Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

  7. Remove from the oven and let it cool for a few minutes before serving.
