Avacado Toast


  • 8 low-carb tortillas

  • 8 large eggs

  • 1/4 cup heavy cream

  • 8 slices of bacon

  • 1 avocado, sliced

  • 1/2 cup shredded cheddar cheese

  • Salt and pepper, to taste

  • 1 tbsp olive oil


  1. Preheat oven to 350°F.

  2. Heat a large skillet over medium heat. Add bacon and cook until crispy. Remove bacon from the skillet and set aside.

  3. In a small bowl, whisk together eggs, heavy cream, salt, and pepper.

  4. Heat olive oil in the skillet over medium heat. Add egg mixture and cook, stirring frequently, until scrambled eggs are fluffy and fully cooked.

  5. Wrap tortillas in foil and warm in the oven for 5-10 minutes.

  6. Assemble the tacos by placing a spoonful of scrambled eggs, a slice of bacon, avocado, and shredded cheddar cheese onto each tortilla.
